Made using only basic ingredients, these vegan and gluten free banana pancakes are a delightfully airy and flavoursome treat that do not require any additional sweeteners (but I like to add a teaspoon or two of sugar!).

Oh, and if you want, add vegan butter and douse with maple syrup for the most unbelievably sweet and decadent breakfast!

These fluffy Banana Pancakes are super sweet and taste just like a slice of warm banana bread (and they’re also vegan!). They’re the perfect brunch or breakfast recipe that everyone will love.

These Banana Pancakes are totally gluten free, egg free and dairy free, whilst remaining fluffy and full of flavour. You’ll only need a few simple ingredients, which you will likely already have in your kitchen!

You can also play about with this recipe by adding anything you fancy into the batter, I love to add a few dark chocolate chips, chopped nuts (pecans or walnuts are delicious), or blueberries.

Ingredients
  

  • 1 Ripe Banana
  • 150 ml Dairy Free Milk of your choice
  • 1 tbsp Olive Oil
  • 2 tsp Vanilla Extract
  • 2 tbsp Sugar
  • 1 Pinch Salt
  • 1/2 tsp Cinnamon
  • 120 grams Plain Flour For gluten free – use 150g gluten free oats, ground to a flour in a blender
  • 1 tsp Baking Powder
  • Oil for frying
  • Maple Syrup / Vegan Butter for topping

Instructions
 

  • Mash the banana in a small bowl, then add in the milk, oil and vanilla
  • In a medium mixing bowl, add sieved flour, baking powder, cinnamon, salt and sugar – Stir until combined
  • Add the wet mixture to the dry bowl and whisk until a smooth batter forms
  • Heat a little oil in a non-stick frying pan over a medium heat
  • Once it’s hot add 2 tablespoons of the batter to the pan and let it cook for 1-2 minutes (or until little bubbles start to appear)
  • Flip the pancake (it should be golden brown on the 'cooked' side)
  • Cook the other side for 30 seconds-1 minute until browned
  • Repeat until the batter has finished – then serve with maple syrup or vegan butter (or anything you like really!)

Can I use Aquafaba?

Yes! I love using Aquafaba. I haven’t used it in the recipe above, but you could maybe replace the oil with 2-3 tbsp of Aquafaba and see how it goes?!
