If you love cinnamon rolls but don't fancy spending hours baking, then you seriously need to make these Cinnamon Roll Pancakes. Enjoy as a fun weekend breakfast that the whole family will love, or even as a post-dinner dessert. You can also prepare these in advance and heat up in the microwave, oven or even the toaster.

Ingredients
  

  • 150g (1 cup) plain flour
  • 1.5 tsp baking powder
  • 1 pinch salt
  • 1/2 tsp cinnamon
  • 3 tbsp sugar
  • 3/4 cup milk
  • 2 tsp vanilla extract
  • 1 tbsp neutral-flavoured oil
  • 1 tsp apple cider vinegar
  • Oil for frying

For the Cinnamon Swirl:

  • 4 tbsp smooth almond butter
  • 1 tbsp brown sugar
  • 2 tsp cinnamon
  • 1-2 tbsp maple syrup or golden syrup

For the Cream Cheese Glaze:

  • 3/4 cup icing sugar
  • 1 tbsp vegan cream cheese
  • 2 tbsp milk of choice

Instructions
 

  • Make the batter by sieving the flour, baking powder and cinnamon into a large bowl. Stir in the sugar and salt.
  • In another medium bowl whisk together the wet ingredients. Pour this into the dry bowl and mix until a batter forms.
  • Make the cinnamon swirl by mixing all the ingredients together in a small bowl. Add this to a piping bag with a small nozzle.
  • Heat up a non stick pan over a medium heat and add a little oil or butter. Pour a on a large spoonful of the batter and smooth into a circle.
  • Using the piping bag, carefully squeeze the cinnamon swirl onto the top of the pancake.  When lots of little bubbles are appearing at the top of the pancake, carefully flip it and cook for a couple more minutes until both sides are golden brown.
  • For the cream cheese glaze, stir the ingredients together in a small bowl until smooth. Drizzle over the pancakes and enjoy!
  • To prepare these in advance, store in the fridge for 3-4 days. Reheat in the microwave, oven, or you can even pop them in the toaster!
