I can’t tell you how delicious this Overnight Chia Oat Pudding was!

You all probably know by now that I’m a huge fan of overnight oats. For example, my Hot Chocolate Overnight Oats have been a big hit!

However, this Quick & Easy Overnight Chia Oat Pudding is a little different. It’s more of a mixture between a chia pudding and overnight oats = heaven! The combination of the tart raspberries, sweet oat milk and subtle vanilla flavour makes this breakfast seriously worth getting up for.

CHICKPEA COOKIE DOUGH {vegan, gluten free, grain free}

Chickpeas have to be the MOST versatile ingredient there is.. they suit both sweet and savoury recipes perfectly. The texture is amazing for cookie dough – so I just had to share this recipe with you! It literally takes under 5 minutes to make and is totally vegan, gluten free and grain free. Chickpeas are high in protein, fibre, manganese and folate  – making this cookie dough actually pretty healthy! It’s great for a snack, dessert, or even for breakfast. SPICED VEGAN FRENCH TOAST

So I have to admit, I’m kinda obsessed with this recipe. I can’t stop making it! I used to love french toast when I was younger (or as my Dad used to call it: ‘eggy bread’..) but never did I think this classic could be veganised. But here we are, and it’s absolutely delicious! Seriously – you won’t believe it’s not made with egg. The magic ingredient is ground flaxseed, which I often use to make ‘flax eggs’ in my recipes. It thickens beautifully to create a thick, egg-like substitute.
