Ingredients
  

Wet:

  • 3 ripe bananas
  • 2 flax eggs (2 tbsp ground flaxseed mixed with 5 tbsp water and left to 'gel up' for 10 minutes)
  • 100 ml milk of choice such as soya, oat etc
  • 60 ml vegetable oil
  • 70 g sugar
  • 3 tbsp nut butter
  • 1 tsp vanilla extract

Dry:

  • 200 g plain flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 50 g cocoa powder
  • 1 pinch salt
  • 100 g dark chocolate chips plus a few more for topping

Instructions
 

  • Preheat the oven to 180C. Grease and line a loaf tin with baking paper
  • Add the wet ingredients to a large bowl and whisk until well combined.
  • Sieve in the flour, baking powder, bicarbonate of soda, cinnamon, cocoa powder and salt, mix until combined
  • Fold in the chocolate chips
  • Pour the batter into the lined tin. Sprinkle a few more chocolate chips on top and place in the oven to bake for 50-55 minutes or until a skewer comes out clean. Remove from the oven, let it cool in the tin for a few minutes before removing and slicing. Enjoy!
