I can’t tell you how delicious this Overnight Chia Oat Pudding was!
You all probably know by now that I’m a huge fan of overnight oats. For example, my Hot Chocolate Overnight Oats have been a big hit!
However, this Quick & Easy Overnight Chia Oat Pudding is a little different. It’s more of a mixture between a chia pudding and overnight oats = heaven! The combination of the tart raspberries, sweet oat milk and subtle vanilla flavour makes this breakfast seriously worth getting up for.
I love adding chia seeds to my breakfasts as they’re packed with omega 3 fatty acids and are a brilliant source of fibre, healthy fats and protein. Not only this, they also contain calcium, manganese, magnesium and phosphorus. They really are nutritional powerhouses!

INGREDIENTS
- 1/3 cup rolled oats
- 3 tbsp chia seeds
- 2/3 cup oat milk
- 1 tsp vanilla extract
- Pinch cinnamon
- Pinch fine sea salt
FOR TOPPING
- Raspberries (fresh or frozen)
- Banana slices
- Pumpkin seeds
- Cacao nibs
- Maple syrup
- Peanut butter (or any nut butter!)
- Coconut shreds
METHOD
- The night before, place the oats, chia seeds, oat milk, vanilla extract and sea salt in a jar or bowl and stir until thoroughly mixed together. Put the lid on the jar and place in the fridge to soak overnight.
- Take them out of the fridge the next morning and stir well. Either serve in a bowl or in the jar (good for on-the-go) and top with your favourite toppings! I LOVE raspberries, banana and peanut butter. Enjoy!
