I have seen this Viral Green Goddess Salad by Baked By Melissa doing the rounds on socials for so long now and I finally understand why. I didn’t realise a salad could taste so amazing, it’s creamy, tangy, crunchy and SO addictive (especially when you eat it with tortilla chips!). It’s vegan and literally packed with goodness – the tastiest way to get your veggies in. It’s also great for meal prep and stays crunchy!

This Creamy Red Pepper Pasta might be my favourite pasta dish I’ve made to date. It can be made in under 20 minutes and the result is a rich, creamy, glossy pasta sauce that looks beautiful and tastes incredible. It’s great for adults and children alike; a sure crowd pleaser.
Watermelon Salad
I’ve been eating this Watermelon Salad since Summer 2022, when an article revealed that a variation of this salad was a favourite of Kate Middleton’s. Apparently, she loved this salad during a heat wave as it’s both refreshing and nutritious. I made a vegan version with cucumber, red onion, mint, vegan feta with a tangy lime dressing, and I can confirm, it is absolutely delicious. It’s now a firm favourite of mine, perfect for warmer days and great for hosting.
Tofu Bacon (Vegan)
As much as I love shop-bought vegan bacon, I try to limit highly processed vegan meat substitutes where I can, and this homemade Tofu Bacon is my go-to when I’m craving a BLT. It’s smoky, crispy, chewy and so delicious, as well as being a great source of plant protein.
