We eat a LOT of hummus in our house (I’m sure you’ve guessed if you’ve followed this blog for a while), but this Sun Dried Tomato Hummus is definitely up there as one of our family favourites!

I’m somewhat of a sucker for sun dried tomatoes. I’m also somewhat of a sucker for hummus. So it only seemed right that I combined the two and tested my suspicions that this could be a match made in heaven. And I was right, sun dried tomato hummus is THE ONE.

Going to make my sun dried tomato hummus recipe? You’ll need the following:

Chickpeas: Chickpeas are a great source of plant-based protein and fibre, and they give the hummus a creamy texture.

Tahini: Tahini is a paste made from ground sesame seeds, and it adds a nutty flavour and creamy texture to the hummus. Tahini is also a good source of healthy fats and minerals such as magnesium and calcium.

Ingredients
  

Hummus Ingredients

  • 1 Tin (400g) Cooked Chickpeas drained and rinsed
  • 100 grams Sun dried tomatoes
  • 1 tbsp Oil from jar of sundried tomatoes
  • 1.5 tbsp Tahini
  • 3 tbsp Extra Virgin Olive Oil
  • 1 Handful Fresh Basil chopped
  • 1 Large Clove of Garlic minced
  • Salt to taste
  • 1 tbsp Water

To Garnish

  • Chopped Sun dried Tomatoes
  • Chopped Basil
  • Extra Virgin Olive Oil
  • Sesame Seeds

Serve With…

  • Toasted Pitta
  • Crudites chopped raw vegetables of your choice
  • Crisps

Instructions
 

  • Add all of the hummus ingredients to a food processor and pulse until smooth and creamy – this may take 1-2 minutes and you will need to stop to scrape the sides down intermittently
  • Taste test and add any more seasoning if required. If you prefer your hummus to be thinner, add more water or olive oil and pulse again
  • Serve with a drizzle of olive oil, a little chopped basil, and chopped sun dried tomatoes and enjoy!

There is very little competition here. Bold Beans Company are by far the best chickpeas I’ve ever had. I didn’t even know there could be such a difference in quality! But there really is. So if you’re making this sun dried tomato hummus, or indeed, any hummus, you’ve got to try these!

How Long Will Homemade Hummus Last?

Homemade hummus, and indeed, this sun dried tomato hummus, can last in the fridge for up to one week when stored properly. It’s important to store homemade hummus in an airtight container in the fridge to prevent it from drying out or absorbing any odours from other foods. You can also add a layer of extra virgin olive oil on top of the hummus before storing it to help preserve its freshness.

It’s worth noting that the texture and flavor of homemade hummus may change slightly over time, as it may thicken and become slightly more acidic. If you find that your hummus has thickened too much, you can thin it out with a little bit of water or lemon juice. You can also adjust the seasoning as needed to refresh the flavor.

If you’re not able to finish your homemade hummus within a week, you can also freeze it for up to three months. When freezing hummus, be sure to store it in an airtight container and leave some space at the top for it to expand as it freezes. When you’re ready to enjoy your frozen hummus, simply thaw it in the refrigerator overnight and give it a good stir before serving.
