This is super quick to make but unbelievably tasty! An excellent option for all vegetarians and vegans out there for a delicious lunch tomorrow…

You’re going to need the following ingredients for this Coronation Chickpeas recipe…

I LOVE Coronation flavours. So I had to make a Coronation Chickpeas Sandwich (and here it is!)
Prep Time 5 minutes
Course Dinner, Lunch
Servings 4 people

Ingredients
  

  • 1 400g tin cooked chickpeas drained and rinsed
  • 4 tbsp vegan mayonnaise
  • 1/2 lemon juiced
  • 1/2 a small red onion diced small
  • 1 tbsp mango chutney
  • 2 tsp curry powder
  • 1 pinch salt to taste
  • 2 tbsp raisins or sultanas

To serve

  • Bread and butter
  • Lettuce
  • Fresh coriander optional

Instructions
 

  • Partially mash the chickpeas with the back of a fork to your desired texture – I like to leave a few whole for texture.
  • Then, add the rest of the ingredients and mix together. Taste test and add any seasonings to your preference.
  • Serve on bread and butter, with lettuce or a sprinkle of fresh coriander. Enjoy!

Believe it or not, coronation sauce, also known as coronation dressing or curry sauce, is a condiment that originated in the UK. It was created for the coronation banquet of Queen Elizabeth II in 1953, hence the name “coronation.”
