Making My Coronation Chickpeas Sandwich? Awesome!

You’re going to need the following ingredients for this Coronation Chickpeas recipe…

  1. Cooked Chickpeas (400g tin, drained and rinsed): Chickpeas are a great source of plant-based protein, fiber, and various vitamins and minerals. They serve as the base for your recipe, providing a hearty texture and neutral taste that can absorb the flavors of the other ingredients.
  2. Vegan Mayonnaise (4 tbsp): Vegan mayonnaise is a creamy condiment made without eggs. It adds a rich and smooth texture to your recipe, creating a binding element for the other ingredients and contributing to the overall creaminess of the dish.
  3. Lemon Juice (Juice of 1/2 lemon): Lemon juice adds a tangy and bright flavor to the recipe. It can help balance the richness of the mayonnaise and enhance the overall taste profile. The acidity from the lemon juice can also help cut through the richness of the dish.
  4. Red Onion (1/2 small onion, diced small): Red onion adds a sharp and slightly sweet flavor to the dish. It also provides a crunchy texture and a pop of color. The small dice ensures that the onion flavor is distributed evenly throughout the dish.
  5. Mango Chutney (1 tbsp): Mango chutney contributes a unique sweet and tangy flavor to the recipe. It can add depth and complexity to the dish, complementing the other flavors. The sweetness from the chutney pairs well with the savory and slightly spicy elements.
  6. Curry Powder (2 tsp): Curry powder brings in a warm and aromatic blend of spices. It’s likely to include spices like turmeric, cumin, coriander, and more. The curry powder introduces a distinct flavor and a mild spiciness that gives the dish its “coronation” character.
  7. Salt (Pinch, to taste): Salt enhances the overall flavors of the dish, helping to bring out the different tastes of the ingredients. It’s important for balancing the sweetness of the chutney and the acidity of the lemon juice.
  8. Raisins or Sultanas (2 tbsp): Raisins or sultanas add a natural sweetness and a chewy texture to the recipe. They can also provide a contrast to the other textures in the dish. The sweet bursts from the raisins/sultanas balance the savory and spicy flavors.

What is Coronation Sauce?

Believe it or not, coronation sauce, also known as coronation dressing or curry sauce, is a condiment that originated in the UK. It was created for the coronation banquet of Queen Elizabeth II in 1953, hence the name “coronation.”

The sauce is known world-wide for its distinct combination of flavors, often blending elements of sweetness, tanginess, and spiciness. It’s delicious and can be mixed with chickpeas, chicken, all sorts!
