How Do You Keep Chickpea Burgers From Falling Apart?

If you follow my chickpea burgers recipe closely, you shouldn’t have any issues. If you make the odd change here and there and the chickpea burgers fall apart, consider these pointers below…

  1. Use a Binding Agent:
    • Incorporate a binding agent such as ground flaxseeds or chia seeds mixed with water (flax or chia “egg”) or breadcrumbs into your burger mixture. These help hold the ingredients together. For your recipe, you’re already using ground rolled oats, which serves as a binding agent.
  2. Chill the Mixture:
    • After you’ve prepared your burger mixture, refrigerate it for at least 30 minutes. Chilling the mixture allows the ingredients to firm up and helps the patties hold their shape when cooking.
  3. Pulse Ingredients:
    • When blending the ingredients in a food processor, pulse them rather than processing continuously. This keeps some texture in the mixture, which can aid in binding.
  4. Avoid Overprocessing:
    • Be cautious not to overprocess the chickpea mixture. Overprocessing can make it too smooth and mushy, which can lead to patties that fall apart. Pulse just until the mixture comes together.
  5. Adjust Moisture:
    • Pay attention to the moisture content. If the mixture seems too wet, you can add a bit more of the binding agent (e.g., ground oats) or even a tablespoon or two of flour until the consistency is firm enough to shape into patties.
  6. Shape Carefully:
    • When forming patties, press them firmly and evenly but avoid compacting them too tightly. Over-pressing can make the patties dense and prone to falling apart. Aim for patties that are about 1/2 to 3/4 inch thick.
  7. Use the Right Pan and Heat Level:
    • Choose a non-stick skillet or a well-seasoned cast-iron pan. Heat the pan to medium-high and add enough oil to lightly coat the bottom. Make sure the pan and oil are hot before adding the patties. Cooking at the right heat ensures that the outside sears quickly, helping to hold the patties together.
  8. Be Patient When Flipping:
    • Allow the patties to cook undisturbed on one side until they develop a crispy crust. When you flip them, do it gently and carefully. Using a spatula, slide it under the patty, then flip it with a quick, controlled motion.
  9. Bake or Grill:
    • If you’re still having trouble, you can try baking the patties in the oven or grilling them. Both methods can be more forgiving in terms of patty integrity.
  10. Practice and Adjust:
    • It may take a few tries to get the hang of making chickpea burgers that hold together perfectly. Don’t be discouraged if the first batch doesn’t turn out as expected. Keep practicing and adjusting the recipe to your preferences.

Are Chickpea Burgers Good For You?

Chickpea burgers can definitely be a nutritious addition to a balanced diet. The main ingredient, chickpeas, are an excellent source of plant-based protein and dietary fiber, making them filling and supportive of digestive health.

Additionally, the incorporation of fresh coriander adds vitamins and antioxidants to the dish, contributing to its nutritional value. The spices such as cumin and smoked paprika not only enhance the flavor but also offer potential health benefits.

However, the overall healthiness of chickpea burgers also depends on the preparation method, including the use of oil for frying (which should be done in moderation). If cooked with care and served with whole-grain buns and plenty of veggies, chickpea burgers can be a wholesome and satisfying alternative to traditional meat-based burgers, especially for those seeking a plant-based, vegan or vegetarian option.

How to Make My Chickpea Burgers with Coriander

If you’re going to make my delicious and INCREDIBLY EASY Chickpea Burgers, you’re going to need the following ingredients…

  1. Cooked Chickpeas (1 400g tin, drained and rinsed):
    • Chickpeas serve as the base of your burger patty, providing a hearty and creamy texture. They are rich in plant-based protein and fiber, making the burger filling and satisfying.
  2. Fresh Coriander (1 handful):
    • Fresh coriander, also known as cilantro, adds a burst of freshness and a distinctive herbal flavor to the burger. It complements the other spices and ingredients while contributing a pleasant, aromatic element to the dish.
  3. Onion (1/2 large, diced):
    • Diced onion adds both flavor and texture to the burger. Onions bring a slightly sweet, savory, and earthy taste when cooked. They also provide moisture and a pleasant crunch.
  4. Garlic (3 cloves, minced):
    • Minced garlic infuses the burger with a pungent and aromatic flavor. Garlic complements the cumin, cayenne pepper, and smoked paprika, enhancing the overall taste profile.
  5. Cumin (1.5 tsp):
    • Cumin is a crucial spice in this recipe, adding a warm and earthy flavor with a hint of citrus. It’s a common spice in many Middle Eastern and Indian dishes and pairs well with chickpeas.

    • Cayenne pepper provides heat and a spicy kick to your burger, adding depth to the flavor. The level of spiciness can be adjusted to your taste preferences.
  7. Smoked Paprika (1 tsp):
    • Smoked paprika contributes a smoky, sweet, and slightly spicy flavor to the burger. It enhances the overall complexity of the taste and pairs well with the other seasonings.
  8. Lemon Juice (1/2 lemon, juiced):
    • Lemon juice adds acidity and brightness to the burger mixture. It helps balance the richness of the chickpeas and adds a zesty, tangy element to the dish.
  9. Nutritional Yeast (1 tbsp, optional):
    • Nutritional yeast is optional but often used in vegan cooking to provide a cheesy, umami flavor. It can add depth and a savory quality to your burger patties.
  10. Salt and Pepper:
    • These seasonings are essential for enhancing the overall taste of the burger. Salt brings out the flavors of the ingredients, while pepper adds a mild, pungent kick.
  11. Ground Rolled Oats (1/2 cup):
    • Ground oats serve as a binding agent in the burger mixture. They help hold the ingredients together, providing structure and preventing the patties from falling apart during cooking.
  12. Oil (for frying):
    • Oil is used for frying the burger patties, giving them a crispy exterior and a pleasing texture. You can use any plant-based oil of your choice for frying.
