Chickpea & Coriander Burgers

Ingredients
  

  • 1 400g tin cooked chickpeas drained and rinsed
  • 1 handful fresh coriander
  • 1/2 a large onion diced
  • 3 cloves garlic minced
  • 1.5 tsp cumin
  • 3/4 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1/2 a lemon juiced
  • 1 tbsp nutritional yeast optional
  • Salt and pepper
  • 1/2 cup rolled oats ground to a flour in a blender
  • Oil, for frying

Serve with

  • 4 burger buns
  • Sriracha mayonnaise
  • Sliced tomato
  • Sliced red onion
  • Mashed avocado
  • Lettuce

Instructions
 

  • Add all the burger ingredients to a food processor and pulse until almost ground down and well combined, scrape down the sides as needed.
  • Divide the batter into 4 and shape into patties.
  • Heat the oil in a frying pan over a medium heat. Fry each patty for 4-5 minutes on each side, until golden brown. Serve in the burger buns with all the trimmings. Enjoy!
