Pumpkin Blended Oats are the perfect comforting antidote to these cold, darker mornings. They’re incredibly rich and creamy, and really do taste like dessert for breakfast. These are also a great option for those of you who struggle with the texture of regular overnight oats. They’re subtly spiced and taste like autumn in breakfast form!

Ingredients
  

  • 1 cup oats I love using the Linwoods Energy Overnight Oats for their added benefits
  • 1/2 cup Greek yoghurt I use vegan
  • 3/4 cup pumpkin puree
  • 3/4 cup milk of choice I like using oat milk or soya milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1.5 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 pinch salt
  • 60 g dark chocolate I use a vegan one

Instructions
 

  • Add all the ingredients apart from the chocolate to a blender and blend until mostly smooth.
  • Melt the chocolate in a heat proof bowl in the microwave in 30 second bursts, or in a Bain Marie/double boiler.
  • Pour into your ramekins, jars or small bowls of choice and top with the melted chocolate. Place in the fridge until the chocolate has set and enjoy.
