Swap your PBJ sandwich for these insane Peanut Butter Jam Overnight Oats. With a creamy oat base, thick layer of raspberry chia jam and a generous drizzle of peanut butter – this is going to become your newest breakfast obsession! It’s perfect for meal prepping and packed with fibre, healthy fats and plant based protein.
Feel free to use regular oats for the overnight oat layer, however, I highly recommend using the Linwoods Energy Strawberry Overnight Oats to make life easier (and tastier!) Simply add milk and leave them to set, but I also added some Greek yoghurt to this batch to enhance the creaminess and protein content. They’re a great source of B vitamins, fibre and omega 3 due to the addition of chia seeds, plus, they taste amazing!






Peanut Butter Jam Overnight Oats
Ingredients
For the Overnight Oats
- 1 cup oats I like to use Linwoods Energy Strawberry Overnight Oats for extra strawberry flavour and goodness – linked above
- 1 cup milk of choice such as oat or soya milk
- 2 tbsp natural or Greek yoghurt I use vegan
- 1 tsp vanilla extract optional
- 1-2 tsp maple or agave syrup optional
For the Raspberry Chia Jam
- 2 cups fresh or frozen raspberries
- 1-2 tsp maple or agave syrup or sweetener of choice
- 2 tbsp whole chia seeds
For serving
- Peanut Butter
- Maple syrup optional
Instructions
- Make the overnight oats by adding all the ingredients to a medium bowl, stirring well and then covering and leaving to soak in the fridge for 2 hours or overnight.
- Make the chia jam by adding the raspberries and sweetener to a saucepan over a medium heat. When they start to soften and the juices start to release, mash the strawberries down with the back of a fork. Simmer for 5-10 minutes. Remove from the heat and stir in the chia seeds – it will gel up and thicken as it cools.
- Layer up your jars, bowls or ramekins with a layer of the overnight oats, chia jam and top with a generous helping of peanut butter. Enjoy!
