Overnight Oats are a summer staple for me, and this Peanut Butter Banana flavour has to be up there with my favourites! They’re satiating, delicious, meal prep-able and super nutritious.
You can have these Peanut Butter Banana Overnight Oats ready in under 5 minutes and you’ll have breakfasts prepared for the week ahead. They’re perfect for the Spring and Summer months as there’s no cooking involved. You can also top with whatever you fancy to switch them up each day (I’ve included topping ideas below!)






Peanut Butter Banana Overnight Oats
Overnight Oats are a summer staple for me, and this Peanut Butter Banana flavour has to be up there with my favourites! They're satiating, delicious, meal prep-able and super nutritious.
Ingredients
- 1 small, ripe banana mashed
- 2 tsp maple syrup
- 3-4 tbsp smooth peanut butter
- 1 tsp vanilla extract
- 165 ml soya milk or milk of choice
- 3 tbsp Greek yoghurt I use vegan
- 1 pinch salt
- 1 tsp cinnamon
- 100 grams rolled oats
Topping Ideas
- Fresh berries
- Ground flaxseed or chia seeds
- More nut butter
- Maple syrup
- Banana slices
- Coconut flakes
- Sunflower seeds or pumpkin seeds
Instructions
- Whisk the mashed banana, peanut butter, Greek yoghurt, maple syrup, cinnamon, milk, vanilla extract and salt together
- Add the oats and stir until thoroughly combined
- Cover and leave to set for 1 hour or overnight. Store in an airtight container in the fridge for upto 3-4 days.
