Peanut Butter Banana Overnight Oats

Overnight Oats are a summer staple for me, and this Peanut Butter Banana flavour has to be up there with my favourites! They're satiating, delicious, meal prep-able and super nutritious.

Servings 4 people

Ingredients
  

  • 1 small, ripe banana mashed
  • 2 tsp maple syrup
  • 3-4 tbsp smooth peanut butter
  • 1 tsp vanilla extract
  • 165 ml soya milk or milk of choice
  • 3 tbsp Greek yoghurt I use vegan
  • 1 pinch salt
  • 1 tsp cinnamon
  • 100 grams rolled oats

Topping Ideas

  • Fresh berries
  • Ground flaxseed or chia seeds
  • More nut butter
  • Maple syrup
  • Banana slices
  • Coconut flakes
  • Sunflower seeds or pumpkin seeds

Instructions
 

  • Whisk the mashed banana, peanut butter, Greek yoghurt, maple syrup, cinnamon, milk, vanilla extract and salt together
  • Add the oats and stir until thoroughly combined
  • Cover and leave to set for 1 hour or overnight. Store in an airtight container in the fridge for upto 3-4 days.
