Blended Peach Oats

These Blended Peach Oats are the perfect Summer breakfast. They’re meal preppable, plantbased and so creamy and delicious. If you struggle with the texture of regular overnight oats, then these are definitely for you. The consistency of blended oats reminds me a little of cake batter!

Something amazing happens when you blend oats with fruit, milk and yoghurt. The ingredients transform into this deliciously creamy pudding that I honestly can’t get enough of. You can serve how you like, but I love to serve on top of chopped peach, and top with a white chocolate shell.

I love to add Garden of Life’s Golden Milk Blend to this which added a beautiful golden colour and some added warmth which worked so well with the peach flavour. You can also use a little turmeric in place of this, or leave out all together.

Peach is one of my all time favourite fruits, and when I saw ripe juicy peaches at the supermarket I knew I had to try a blended oats recipe with them. So far I’ve done Strawberry Blended Oats and Mango Blended Oats, and peach worked just as well!

Blended Peach Oats

Ingredients
  

  • 100 g rolled oats
  • 125 ml milk of choice
  • 100 g fresh peach chopped
  • 110 g Greek yoghurt
  • 1 tsp vanilla extract I use vegan
  • 1/2 tsp turmeric OR 1.5 scoops of Garden of Life Golden Milk blend optional
  • 1 pinch salt
  • 1 tbsp maple syrup or sweetener of choice

For the White Chocolate Shell

  • 60 g white chocolate I used vegan
  • 2 tsp coconut oil optional – helps to thin the chocolate making it easier to create the shell

Instructions
 

  • Add all of the blended oats ingredients to a blender, blend until a 'cake batter' consistency forms.
  • Pour into your jars (you can also add chopped peach to the bottom of the jar like I did). Smooth over the top.
  • Melt the white chocolate along with the coconut oil (if using) – do this in the microwave or in a Bain Marie. Pour over the blended oats so it covers the top. Place in the fridge to set for 2-3 hours or overnight. Enjoy!
