I know this isn’s a traditional addition to a Christmas dinner, but I absolutely love them and think they’re great as a side dish!
They’re also super simple to make and a great way to add some flare to a Sundar Roast or Christmas Lunch!
This is a great way to elevate your pea-game. No more bland boiled peas, plated up without any love whatsoever. With just a few ingredients and 15 minutes of your time, you can create the most delicious pea-side-dish.
I LOVE using shallots wherever possible in my recipes (they add such a lovely flavour), but you could in theory use red-onion if you’re unable to access shallots for whatever reason.
These minted peas are partly smashed which really adds to the texture and flavour, they’re the perfect accompaniment to your roast dinner.


Minted Peas with Shallots
Ingredients
- 500 grams Peas (I use frozen)
- 1.5 Shallots diced
- 4 Garlic Cloves minced
- 4 tbsp Vegan Butter
- 3 tbsp Mint Leaves finely chopped
- 1 pinch Salt (add more to taste)
- 1 pinch Black Pepper (add more to taste)
Instructions
- Defrost the peas in warm water for 30-40 minutes
- Drain the peas, then place a third of them in a pestle & mortar – crush them for around 30 seconds
- If you don't have a pestle & mortar, you can use the top of a rolling pin to 'smash' the peas in a bowl
- Add the butter to a pan over a low-medium heat, once melted, add the diced shallots and garlic and saute for around 3 minutes
- Add all of the peas (including the mashed peas) and cook for a further 3 minutes, stirring regularly.
- Add in the chopped mint leaves, salt and pepper and continue to cook for a further 3-4 minutes while stirring. Serve and enjoy!
