Minted Peas with Shallots

Ingredients
  

  • 500 grams Peas (I use frozen)
  • 1.5 Shallots diced
  • 4 Garlic Cloves minced
  • 4 tbsp Vegan Butter
  • 3 tbsp Mint Leaves finely chopped
  • 1 pinch Salt (add more to taste)
  • 1 pinch Black Pepper (add more to taste)

Instructions
 

  • Defrost the peas in warm water for 30-40 minutes
  • Drain the peas, then place a third of them in a pestle & mortar - crush them for around 30 seconds
  • If you don't have a pestle & mortar, you can use the top of a rolling pin to 'smash' the peas in a bowl
  • Add the butter to a pan over a low-medium heat, once melted, add the diced shallots and garlic and saute for around 3 minutes
  • Add all of the peas (including the mashed peas) and cook for a further 3 minutes, stirring regularly.
  • Add in the chopped mint leaves, salt and pepper and continue to cook for a further 3-4 minutes while stirring. Serve and enjoy!
