Vegan Biscoff Rocky Road

Do you sometimes (often) drift off to sleep thinking about Biscoff? Yeah, me too. What about Rocky Road? Yup. Well I’ve only gone and combined the two to make the ultimate Rocky Road, a Biscoff Rocky Road…

The Ingredients – Biscoff Rocky Road

If you’re going to make this Biscoff Rocky Road recipe, you’ll need the following ingredients…

Biscoff spread: Biscoff spread, also known as cookie butter, is a spread made from ground-up Biscoff cookies. It has a sweet, slightly spiced flavour that is similar to gingerbread, with notes of cinnamon and brown sugar. It also has a thick, creamy texture that adds richness and depth to the rocky road.

Vegan white chocolate: Vegan white chocolate is used to add sweetness and creaminess to the recipe. It has a rich, milky flavour that pairs well with the Biscoff spread and adds a smooth texture to the rocky road.

Vegan butter: Vegan butter, made from plant-based oils, is used to add richness and a buttery flavour to the recipe. It also helps to bind the ingredients together and adds a smooth texture.

Biscoff biscuits: Biscoff biscuits, which are similar to graham crackers, are a key ingredient in this recipe. They add a crunchy texture and a sweet, spiced flavour that complements the Biscoff spread and white chocolate.

Vegan Mini Marshmallows: Marshmallows are a classic ingredient in rocky road, adding a soft, chewy texture and a sweet flavour. Vegan mini marshmallows are used in this biscoff rocky road recipe to ensure that the rocky road is vegan-friendly. You could also cut up larger vegan marshmallows if you can’t find mini ones.

Biscoff spread (for topping): Additional Biscoff spread is used as a topping for the rocky road, adding a swirl of sweet and spiced flavour to the finished product.

Together, these ingredients create a delicious and indulgent dessert that is full of rich, spiced flavour and a variety of textures, from the creamy white chocolate to the crunchy biscuits. The combination of the Biscoff spread and white chocolate creates a creamy and sweet base, while the broken-up Biscoff biscuits add a satisfying crunch. The extra Biscoff spread on top adds a final burst of flavour and a beautiful finishing touch.

How to Melt Biscoff Spread

Melting Biscoff spread can be a bit tricky as it is a very thick and sticky spread. However, there are a few methods you can use to make it easier to melt. Just to make it clear, I use a microwave, however, if you don’t have one, there are alternative methods!

Microwave: Scoop the desired amount of Biscoff spread into a microwave-safe bowl and microwave it for 10-15 seconds at a time, stirring in between until it reaches the desired consistency. Be careful not to overheat it, as it can burn easily.

Bain-Marie: Fill a small saucepan with a few inches of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, making sure the bottom of the bowl does not touch the water. Scoop the desired amount of Biscoff spread into the bowl and stir until melted.

Oven: Preheat your oven to 350°F (175°C) and scoop the desired amount of Biscoff spread into an oven-safe dish. Place the dish in the oven for a few minutes until the spread is melted and gooey.

Once the Biscoff spread is melted, you can then drizzle it over the top as a finishing touch.

Nuts: Adding chopped nuts like almonds, hazelnuts, or pecans can add a great crunch and depth of flavour to the rocky road.

Dried fruit: Adding dried fruit like cranberries or raisins can add a sweet and chewy texture to the rocky road.

Coconut: Adding shredded coconut can add a tropical twist to the rocky road and complement the sweet and spiced flavour of the Biscoff spread.

Pretzels: Adding crushed pretzels can add a salty crunch to the sweet and spiced rocky road.

Chocolate chips: Adding vegan chocolate chips can add an extra layer of richness and chocolate flavor to the rocky road.

Sea salt: Sprinkling a little bit of sea salt over the top of the rocky road can balance out the sweetness and add a nice contrast of flavour.

Prep Time 20 minutes
Course Dessert
Servings 12 people

  • 150 grams Biscoff Spread
  • 300 grams Vegan White Chocolate
  • 80 grams vegan butter unsalted
  • 200 grams Biscoff Biscuits broken up
  • 100 grams Vegan Mini Marshmallows (or cut up larger ones)

  • 1-2 tbsp Biscoff Spread

  • Line an 8×8" tin with baking paper.
  • Add the vegan butter, white chocolate and Biscoff Spread to a large, heat proof bowl and either melt in the microwave (in 30 second bursts, stirring in between), or place over a pan of simmering water (not letting the bowl touch the water) and melt until smooth.
  • Remove the bowl from the heat and stir in the marshmallows and broken biscuits and stir until thoroughly combined.
  • Pour this into the lined tin and flatten down – I find it easier to do this by placing a piece of baking paper over the top and gently pressing down until flattened.
  • Place in the freezer to set for 30 minutes – 1 hour. Remove and drizzle over some melted Biscoff Spread (I microwave it for a few seconds until runny), let the drizzle set before slicing into 12 slabs. Store in an airtight container in the fridge.

What Flavours Are in Rocky Road?

Rocky Road is a classic American dessert that typically contains a combination of chocolate, marshmallows, and nuts. Here are the most common flavours you can expect to find in a traditional rocky road:

Chocolate – usually in the form of chocolate chips or melted chocolate, which serves as the base for the dessert.

Marshmallows – typically mini marshmallows are used, which add sweetness and texture to the dessert.

Nuts – usually almonds or walnuts are used, which add crunch and nutty flavour.

Graham crackers or other crunchy biscuits – sometimes used as a base or mixed in for additional texture.

Other variations – some recipes may also include coconut, peanut butter, or dried fruit like raisins or cranberries.

But this Biscoff Rocky Road, obviously, is a little different (and dare I say it, better…?)

Is Biscoff Spread Like Caramel?

Biscoff spread is a sweet spread made from Biscoff cookies, which have a distinct spicy, caramel-like flavour. As such, Biscoff spread definitely does have a caramel-like taste, but it also has a slightly crunchy texture due to the cookie crumbs. Some people describe the taste as a combination of caramel and gingerbread.
