The Ingredients – Biscoff Rocky Road

If you’re going to make this Biscoff Rocky Road recipe, you’ll need the following ingredients…

Biscoff spread: Biscoff spread, also known as cookie butter, is a spread made from ground-up Biscoff cookies. It has a sweet, slightly spiced flavour that is similar to gingerbread, with notes of cinnamon and brown sugar. It also has a thick, creamy texture that adds richness and depth to the rocky road.

Vegan white chocolate: Vegan white chocolate is used to add sweetness and creaminess to the recipe. It has a rich, milky flavour that pairs well with the Biscoff spread and adds a smooth texture to the rocky road.

How to Melt Biscoff Spread

Melting Biscoff spread can be a bit tricky as it is a very thick and sticky spread. However, there are a few methods you can use to make it easier to melt. Just to make it clear, I use a microwave, however, if you don’t have one, there are alternative methods!

Microwave: Scoop the desired amount of Biscoff spread into a microwave-safe bowl and microwave it for 10-15 seconds at a time, stirring in between until it reaches the desired consistency. Be careful not to overheat it, as it can burn easily.

Bain-Marie: Fill a small saucepan with a few inches of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, making sure the bottom of the bowl does not touch the water. Scoop the desired amount of Biscoff spread into the bowl and stir until melted.

Oven: Preheat your oven to 350°F (175°C) and scoop the desired amount of Biscoff spread into an oven-safe dish. Place the dish in the oven for a few minutes until the spread is melted and gooey.

Once the Biscoff spread is melted, you can then drizzle it over the top as a finishing touch.

Ingredients
  

  • 150 grams Biscoff Spread
  • 300 grams Vegan White Chocolate
  • 80 grams vegan butter unsalted
  • 200 grams Biscoff Biscuits broken up
  • 100 grams Vegan Mini Marshmallows (or cut up larger ones)

Topping

  • 1-2 tbsp Biscoff Spread

Instructions
 

  • Line an 8×8" tin with baking paper.
  • Add the vegan butter, white chocolate and Biscoff Spread to a large, heat proof bowl and either melt in the microwave (in 30 second bursts, stirring in between), or place over a pan of simmering water (not letting the bowl touch the water) and melt until smooth.
  • Remove the bowl from the heat and stir in the marshmallows and broken biscuits and stir until thoroughly combined.
  • Pour this into the lined tin and flatten down – I find it easier to do this by placing a piece of baking paper over the top and gently pressing down until flattened.
  • Place in the freezer to set for 30 minutes – 1 hour. Remove and drizzle over some melted Biscoff Spread (I microwave it for a few seconds until runny), let the drizzle set before slicing into 12 slabs. Store in an airtight container in the fridge.
