Ready for a wonderfully healthy shock? Enter… my delicious seed crackers. I know ‘healthy’ things get a bad reputation for flavour, but these are actually delicious! Trust me. Give them a go, dip them in some hummus, and enjoy!

These savoury crackers make the perfect mid morning and mid afternoon snack when paired with hummus (I love them with my homemade sundried tomato hummus) or butter and cheese.

They contain no flour, and are packed full of healthy fats, plant protein and a good dose of fibre – making them perfect for keeping you satiated and energised throughout the day.

I love to have a batch of these prepared ready for snacks during the week, preventing me from reaching for those convenient higher sugar snack options. So they’re perfectly ‘prep-able’.

Ingredients for My Seed Crackers

  1. Pumpkin seeds: These are an excellent source of plant-based protein, healthy fats, fiber, and various minerals like magnesium, zinc, and iron. They add a nutty flavor and crunchy texture to the crackers.
  2. Sunflower seeds: Similar to pumpkin seeds, sunflower seeds provide protein, healthy fats, fiber, and nutrients like vitamin E, magnesium, and selenium. They contribute a mild nutty taste and crunch.
  3. Sesame seeds: These tiny seeds are rich in fiber, protein, and minerals like copper, manganese, and calcium. They lend a nutty, slightly earthy flavor and add a delightful crunch to the crackers.
  4. Ground flaxseed/linseed: Flaxseeds are an excellent source of omega-3 fatty acids, fiber, and lignans (plant compounds with antioxidant properties). The ground form helps bind the ingredients together and contributes a slightly nutty taste.
  5. Nutritional yeast: This deactivated yeast is a rich source of B-vitamins, particularly B12, which is important for vegans. It adds a savory, umami flavor often described as “cheesy” or “nutty”.
  6. Garlic powder: Garlic powder provides a concentrated garlic flavor, adding a savory and aromatic note to the crackers.
  7. Onion powder: Similar to garlic powder, onion powder contributes a robust onion flavor, enhancing the overall savory taste of the crackers.
  8. Dried oregano: This herb adds an earthy, slightly bitter, and aromatic flavor, complementing the other savory elements in the crackers.
  9. Sea salt: Salt not only enhances the overall flavor but also helps balance the sweetness from the seeds and nutritional yeast.
  10. Olive oil: The olive oil acts as a binding agent, helping to hold the ingredients together. It also contributes a subtle fruity flavor and makes the crackers slightly crispy when baked.
  11. Warm water: The warm water hydrates the ingredients and allows them to bind together, creating a dough-like consistency that can be rolled out and baked into crackers.

Ingredients
  

  • 80g (1/2 cup) pumpkin seeds
  • 80g (1/2 cup) sunflower seeds
  • 80g (1/2 cup) sesame seeds
  • 50g (1/2 cup) ground flaxseed / linseed
  • 2 tbsp nutritional yeast
  • 1.5 tsp garlic powder (or granules)
  • 1.5 tsp onion powder (or granules)
  • 1 tsp dried herbs I used oregano
  • 1 tsp fine sea salt
  • 2 tbsp olive oil plus extra for brushing
  • 410 ml (1.75 cups) warm water

Instructions
 

  • Add the sesame, pumpkin, sunflower seeds and ground flaxseed to a medium sized bowl and stir.
  • Add the salt, dried herbs, onion powder, garlic powder and nutritional yeast and stir again.
  • Add the olive oil and warm water and stir until thoroughly combined. Cover and leave for 5-10 minutes (the mixture will thicken and gel up)
  • Preheat the oven to 170C (340F) and line a large baking tray with parchment paper.
  • Add your seed mixture and pat down with the back of a spoon so it's evenly and thinly spread out with no holes (it may be easier to place a piece of parchment paper over the top and roll with a rolling pin, then gently peel it off)
  • Brush with a little olive oil and then place in the oven to bake for 50-55 minutes, or until golden brown and crispy. Do not let them burn!
  • Remove from the oven and let them cool completely before breaking into pieces. Store in an airtight container for upto 3 weeks. Enjoy!
