Ingredients
  

  • 250 grams (or 1.5 cups) frozen garden peas cooked/thawed to room temperature
  • 1.5 cloves garlic
  • 1 handful fresh mint leaves chopped
  • 2 tsp tahini
  • 1/2 a large lemon juiced
  • 3 tbsp extra virgin olive oil
  • 1/4 tsp chilli powder optional
  • 1/2 tsp salt or more, to taste
  • Cracked black pepper to taste

For serving

  • Toasted sourdough
  • Drizzle of extra virgin olive oil
  • Chilli flakes

Instructions
 

  • Add all the ingredients to a food processor and pulse for a few seconds, take the lid off and scrape down the sides and pulse again for a couple more seconds (the longer you blend, the smoother it will be, I like to preserve some texture)
  • Taste test and any more seasonings to your preference.
  • Load onto toasted sourdough with a drizzle of olive oil and a sprinkle of chilli flakes and devour. You can store leftovers in the fridge for upto 4 days.

    The blitzer let us down this time, so next time, I’ll blitz the garlic first. We did double up on the garlic as usual, which worked well. Overall, it’s a dish we’d definitely recreate. We’ve also thought of a few meal pairings beyond sourdough toast to make it more versatile.

  2. Best Pea dish I’ve made in a long time. I make it twice a week and mix the herbs up by using oregano and thyme as well. I use with scrambled eggs as well. 🧡💚🩷
