These Smashed Peas on Toast are the perfect alternative to Avocado Toast. Not only are they more sustainable, they're higher in protein and absolutely delicious. You can whip these up in under 5 minutes, and have a delicious lunch prepared for the week. Load onto toasted sourdough and enjoy!

Ingredients
250grams(or 1.5 cups) frozen garden peascooked/thawed to room temperature
1.5clovesgarlic
1handfulfresh mint leaveschopped
2tsptahini
1/2a large lemonjuiced
3tbspextra virgin olive oil
1/4tspchilli powderoptional
1/2tspsaltor more, to taste
Cracked black pepperto taste
For serving
Toasted sourdough
Drizzle of extra virgin olive oil
Chilli flakes
Instructions
Add all the ingredients to a food processor and pulse for a few seconds, take the lid off and scrape down the sides and pulse again for a couple more seconds (the longer you blend, the smoother it will be, I like to preserve some texture)
Taste test and any more seasonings to your preference.
Load onto toasted sourdough with a drizzle of olive oil and a sprinkle of chilli flakes and devour. You can store leftovers in the fridge for upto 4 days.
