Mango Yoghurt Pops
These Mango Yoghurt Pops only require 3 ingredients and they're the most refreshing and delicious Summer treat that both adults and kids will love! They're super easy to make and can be made vegan and gluten free.
Ingredients
- 250 grams (1 cup) Greek Yoghurt I use vegan
- 1 small, ripe mango cubed
- 200 grams white chocolate (you can also use milk or dark chocolate) I use vegan
- 1 tbsp coconut oil optional
Instructions
- Start by adding the yoghurt to a medium bowl and stirring in the cubed mango.
- Line a flat tray or plate (that will fit in your freezer!) with baking paper.
- Add spoonfuls of the yoghurt-mango mixture to the tray and shape into circles using the back of your spoon. Depending on the size of your circles you should get between 5-7 popsicles. Place in the freezer for a minimum of 1 hour until frozen solid.
- Once frozen, melt the chocolate with the coconut oil (the coconut oil is optional, it just helps to thin the chocolate making the coating process easier) in a Bain Marie or double boiler, or in 30 second bursts in the microwave until smooth and runny.
- Dip the popsicles into the chocolate and cover them using a spoon. Place back on the baking tray and set the chocolate either in the fridge or freezer until it's solid.
- Store in the freezer for upto 1 month. Let thaw for a few minutes before eating. Enjoy!
