This Golden Mango Chia Pudding is the ultimate Summer breakfast. It’s packed with fibre, protein and healthy fats and is sure to keep you satiated all morning. The combination of mango and turmeric is a match made in heaven, it’s deliciously sweet and creamy. It’s also meal prep-able, I like to prepare in jars layered with yoghurt – perfect to grab and go on busy mornings!

The combination of mango and turmeric is a match made in heaven, it's deliciously sweet and creamy. Ingredients
  

  • 1 cup ripe mango roughly chopped
  • 1/2 cup chia seeds
  • 1.5 cups creamy yoghurt of choice
  • 1.5 cups soya milk or milk of choice
  • 1.5 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1/2-1 tsp turmeric powder I also love to use 3 scoops of Garden of Life's Golden Milk Blend

Instructions
 

  • Add the mango, yoghurt, milk, vanilla and maple syrup to a blender and blend until smooth.
  • Add to a large dish along with the chia seeds and whisk until well combined – this works best with a fork or small whisk. Cover and place in the fridge to set for 2 hours or overnight. It can help to stir half-way through.
  • Serve and enjoy!
