Cookie Dough Balls

These No Bake Cookie Dough Balls (or some people call them ‘bites’ – but I prefer balls) are the perfect grab and go snack. The best bit? They only require 6 ingredients, and they couldn’t be simpler to make. They’re naturally vegan and really filling too.


I’m a sucker for a no bake dessert, especially when meal prepping. It makes life so much easier when you don’t need to turn the oven on!

These Cookie Dough Balls only require 6 ingredients, can be ready in 30 minutes, and you’ll have delicious sweet treats ready for the week ahead.


Cookie Dough Balls

These No Bake Cookie Dough Balls are made with a base of nut butter.

You can use ANY nut butter, but I love using peanut butter personally.

My favourite nut butter brand at the moment is Pip and Nut – just in case you’re wondering!

But, if you’d prefer a more neutral flavoured cookie dough ball then use almond or cashew butter.

You’ll Need the Following…

Nut Butter (peanut butter, cashew butter, almond butter): Nut butter helps bind the ingredients together and provides a rich, creamy texture – oh, and a nice protein hit!

Maple Syrup: Maple syrup acts as the main sweetener in these cookie dough balls. It not only adds sweetness but also contributes to the overall moisture and chewiness of the cookie dough balls. Maple syrup’s distinct flavour also complements the nutty-ness.

Vanilla Extract or Paste: Vanilla adds a subtle warmth to the cookie dough balls.

Ground Almonds (or Almond Flour): Ground almonds or almond flour provide a nutty flavour and a lovely texture to the cookie dough balls. They also help bind the ingredients together.

Rolled Oats Ground into Flour: The ground rolled oats help bind the ingredients and provides some fibre and nutrients. I’ve attached a video below on how to ground your rolled oats in to flour!

Dark Chocolate Chips or Chunks: Dark chocolate chips or chunks add pockets of rich, decadent chocolate flavour to the cookie dough balls.

How to Ground Rolled Oats


Cookie Dough Balls

First of all we need to make the oat flour (there’s a great video above on how to do this!)

Then we get ourselves a medium sized bowl, and combine the nut butter (of choice), maple syrup and vanilla extract.

Stir or whisk until combined thoroughly.

Add the chocolate chips and mix in until dispersed.

FINALLY, scoop around a tablespoon of the mixture, then roll into a ball with your hands.


TOP TOP TOP TIP!

I HIGHLY recommend microwaving a ball for 15 seconds before eating it. It goes all fudge-y and the chocolate all melty.

I promise, you won’t want to eat them any other way!

Servings 8 balls

Ingredients
  

  • 1/2 cup smooth nut butter such as peanut butter, cashew butter, almond butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract or paste
  • 1/2 cup ground almonds or almond flour
  • 1/2 cup rolled oats ground in a blender to form a flour
  • 1/4 cup dark chocolate chips or chunks

Instructions
 

  • If you haven't already, make the oat flour by adding your rolled oats to a blender and pulsing until a fine forms.
  • Add the nut butter to a medium sized bowl along with the maple syrup and vanilla extract. Stir or whisk until well combined.
  • Add the ground almonds and oat flour and stir until thoroughly combined and a cookie dough-like consistency has formed.
  • Add the chocolate chips and mix in until evenly dispersed.
  • Take a taplespoon of the mixture and roll into a ball and place on a lined tray or plate. Refrigerate for 30 minutes. Store in an airtight container in the fridge.

To store these well and to preserve for as long as possible, place them in an airtight container in the fridge.

They should last approximately 1 week if stored correctly!


This may sound a little weird, but I’ve made a Chickpea Cookie Dough recipe and it’s actually REALLY nice!
