No Bake Cookie Dough Balls

These No Bake Cookie Dough Balls are the perfect grab and go snack. They only require 6 ingredients, and they couldn't be simpler to make. They're naturally vegan and really filling too.

Ingredients
  

  • 1/2 cup smooth nut butter such as peanut butter, cashew butter, almond butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract or paste
  • 1/2 cup ground almonds or almond flour
  • 1/2 cup rolled oats ground in a blender to form a flour
  • 1/4 cup dark chocolate chips or chunks

Instructions
 

  • If you haven't already, make the oat flour by adding your rolled oats to a blender and pulsing until a fine forms.
  • Add the nut butter to a medium sized bowl along with the maple syrup and vanilla extract. Stir or whisk until well combined.
  • Add the ground almonds and oat flour and stir until thoroughly combined and a cookie dough-like consistency has formed.
  • Add the chocolate chips and mix in until evenly dispersed.
  • Take a taplespoon of the mixture and roll into a ball and place on a lined tray or plate. Refrigerate for 30 minutes. Store in an airtight container in the fridge.
