Almond Croissant Overnight Oats

They've got all the flavours of an almond croissant, in a wholesome, creamy, satisfying, make-ahead breakfast that's surprisingly good for you.
Ingredients
- 1 cup oats I like using the Linwoods Energy Overnight Oats for added chia seeds and B vitamins
- 2 tbsp ground almonds
- 1.5 cups milk of choice
- 1 tbsp Greek yoghurt I use vegan
- 1 tsp almond extract
- 1/2 tsp vanilla extract
- 1 pinch salt
- 2 tsp maple syrup
Almond Butter Caramel
- 2.5 tbsp almond butter
- 1.5 tbsp milk of choice
- 1.5 tbsp maple syrup
- 1 tsp coconut oil melted
- 1 pinch salt
Yoghurt Topping
- 3/4 cup Greek Yoghurt I use vegan
- 1 tsp vanilla extract optional
- 1/2 tsp maple syrup optional
For Topping
- Toasted Flaked Almonds
- Icing Sugar
Instructions
- In a dish or container stir together the overnight oats ingredients until well combined, cover and leave in the fridge to set for 1-2 hours
- Make the almond butter caramel by stirring the ingredients together until smooth and creamy. Spread this over the oats layer.
- Make the yoghurt layer and spread over the caramel layer. Sprinkle over the flaked almonds and dust with icing sugar before devouring!
