What to Eat with Your Green Goddess Dressing…

A few years ago the Green Goddess Dressing (and variations of it) took social media by storm (thanks Baked By Melissa). Millions of people were inspired by this, yes, VERY OLD dish! You heard that right, the dressing is not a new creation – It’s actually over 100 years old…

Anyway, for those acquainted, you’ll realise that the green goddess dressing is typically applied to leafy greens, but if that’s the only way you’re using it, you’re missing out!

There are actually SO many ways you can use it. And today I’m going to talk you through them…

Green Goddess Dressing

Green Goddess Salad

Typically, the green goddess dressing is mixed in with leafy greens, cucumber and spring onions becoming a salad (this is my recipe!). But, even within the context of a salad, there are so many potential variations.

You can change the greens, the herbs, the nuts… You can even add in avocado to give the creamy dressing even more cream!

I’m thinking parsley, romaine lettuce, perhaps even a little sweetness from apple or pear!

Green Goddess Chicken Salad

For those who follow me on social media, I’m obviously vegan. So I’m talking vegan chicken here… (shout out This UK!).

Adding a little chicken to my green goddess salad transforms this into a protein-packed dish.

Green Goddess Potato Salad

This is a nice little creamy twist on the ‘classic’ potato salad.

You could boil small potatoes (like new potatoes) until tender but firm.

Once cooled, I’d dice them and mix with celery and romaine lettuce for some crunch; and a bit of parsley for freshness.

The Green Goddess dressing then replaces the usual mayo, giving the salad a lively herbal taste and MUCH less heaviness. I’d probably add finely chopped green onions too!

It’d perfect for picnics or barbecues where you want something creamy but fresh.


Green Goddess Grains? Pasta?!

I’m not going to lie. I LOVE to use the Green Goddess dressing on so many things. On my lazier days, I’ll often be found standing at the fridge with a carrot in one hand and a pot of dressing in another – dipping as I stare aimlessly…

The Green Goddess dressing 100% goes beyond dishes that are just leafy greens.

It works REALLY well with some grains and pasta, adding creaminess and fresh flavour.

These options make meals more filling while keeping that bright, herby taste.

Green Goddess Pasta Salad

Green Goddess pasta salad is one of my favourites for a quick lunch or picnic – my toddler loves it too!

I’ll prepare the dressing while the pasta is cooking, let the pasta cool down, then mix in the dressing. You can then even add some chopped cucumber, peas, cherry tomatoes… all sorts!

Oh and don’t forget a handful of fresh herbs, like basil or parsley!

Green Goddess Quinoa Summer Salad

I love a quinoa salad

And thankfully, quinoa is great for soaking up the rich Green Goddess dressing.

I’ve only done this once, but I mixed cooked quinoa with peas, diced avocado, spring onions, and the dressing.

The dressing blends everything together with its lovely herby tangy flavour.

Other Ways to Eat Green Goddess Dressing…

As you’ve probably gathered by now, Green Goddess Dressing is pretty versatile…

You can use it in many ways beyond just salads. Dip it with crunchy snacks, spread it on sandwiches, or toss it with chilled vegetables, beans, or even [vegan] meats.

Dipping with Veggies and Snacks

I often turn Green Goddess into a dip because it pairs well with fresh, crisp veggies.

Sliced cucumber, crunchy carrots, celery sticks – they all taste great with the dressing!

It’s also perfect for roasted chickpeas or crunchy snacks like pretzels.

Topping for Sandwiches and Wraps

Adding Green Goddess dressing to sandwiches or wraps takes them up a notch.

The creamy texture makes every bite moist and EXTREMELY flavoursome. It goes very well with vegan-grilled chicken or turkey.

TOP TIP: I like spreading the dressing thinly on bread, then layering in fresh lettuce and thin cucumber slices.

Adding to Chilled and Chopped Salads

The beauty of the dressing is that you can prepare it in advance and freeze it! I saw someone use a ice cube tray, fill it with the dressing, and let it freeze.

That way, each time you want a salad, you can simply prepare the veg fresh, pop out a couple of ice cubes, and let them thaw!

Make sure you don’t add the lemon before you freeze though! Stir a few drops in once you’ve let it thaw.
