Fig rolls are one of my favourite sweet treats, and although a lot of supermarket fig rolls are accidentally vegan, I’ve always wanted to create a healthier version for my toddler and I to enjoy. These came out perfectly – the taste and texture is divine, plus they’re made with wholesome, plant based ingredients!

Fig rolls are one of my favourite sweet treats, and although a lot of supermarket fig rolls are accidentally vegan, I've always wanted to create a healthier version for my toddler and I to enjoy. These came out perfectly – the taste and texture is divine, plus they're made with wholesome, plant based ingredients!

Ingredients
  

Crust:

  • 195 grams rolled oats
  • 100 g ground almonds
  • 3 tbsp tapioca flour
  • 1/4 tsp bicarbonate of soda
  • 3/4 cup coconut oil melted
  • 5 tbsp maple syrup
  • Pinch salt
  • 1 orange zested
  • 1 tsp vanilla extract

Filling:

  • 300 grams dried figs
  • 1/4 cup water
  • 1/4 tsp cinnamon
  • 1 tbsp maple syrup
  • 1 pinch salt

Instructions
 

  • Preheat the oven to 180C and line a baking tray with baking paper.
  • Add the dried figs to a bowl and cover with boiled water, set aside to soak for 20 minutes.
  • Make the oat flour by adding your oats to a blender and pulse until it's ground down and a a flour has formed.
  • Add the oat flour to a bowl along with the remaining crust ingredients. Mix well until a dough has formed.
  • Drain the figs and add them to a food processor along with the remaining filling ingredients. Pulse until a sticky mixture has formed.
  • Lay out a large piece of baking paper on a surface and add the dough. Place another large piece of baking paper on top and roll out until it's around 1/3" thick. Peel off the top sheet of baking paper.
  • Add the fig mixture to the rolled out dough and spread it down the centre in a sausage shape.
  • Using the baking paper, carefully lift one side over the middle, then do the same with the other side.
  • Slice into around 8 rolls and lay each one on the lined tray. Place into the oven to bake for 12-14 minutes, they will have turned golden brown.
  • Remove from the oven and leave to cool. Enjoy! Store in an airtight container.

  1. I made this ones today, they are absolutely delicious. I didn’t have tapioca starch so I used corn flour instead. They turned out great.

    Absolutely delicious – amazing. I didn’t think a “healthy” fig roll would come close. But SO good. And tapioca flour worth procuring as makes them delicious and crispy and I will definitely be making these again. Thank you.
