Fig rolls are one of my favourite sweet treats, and although a lot of supermarket fig rolls are accidentally vegan, I've always wanted to create a healthier version for my toddler and I to enjoy. These came out perfectly - the taste and texture is divine, plus they're made with wholesome, plant based ingredients!
Preheat the oven to 180C and line a baking tray with baking paper.
Add the dried figs to a bowl and cover with boiled water, set aside to soak for 20 minutes.
Make the oat flour by adding your oats to a blender and pulse until it's ground down and a a flour has formed.
Add the oat flour to a bowl along with the remaining crust ingredients. Mix well until a dough has formed.
Drain the figs and add them to a food processor along with the remaining filling ingredients. Pulse until a sticky mixture has formed.
Lay out a large piece of baking paper on a surface and add the dough. Place another large piece of baking paper on top and roll out until it's around 1/3" thick. Peel off the top sheet of baking paper.
Add the fig mixture to the rolled out dough and spread it down the centre in a sausage shape.
Using the baking paper, carefully lift one side over the middle, then do the same with the other side.
Slice into around 8 rolls and lay each one on the lined tray. Place into the oven to bake for 12-14 minutes, they will have turned golden brown.
Remove from the oven and leave to cool. Enjoy! Store in an airtight container.
