Unless you’ve been living under a rock, you’ve probably seen the Viral Cucumber Salad going round the internet right now. Created by the genius that is Logansfewd – it’s an addictive, asian inspired cucumber salad that has the most addictive crunch.
I knew I needed to make this salad as soon as I saw it. This is my take, I decided to add peanut butter (of course) to create a satay sauce and WOW it was incredible! I finished the entire salad on my own.




Viral Cucumber Salad

Ingredients
- 1 large cucumber
- 2.5 tbsp dark soy sauce
- 1/2 tsp chilli flakes
- 2 tsp peanut butter
- 1.5 tbsp sesame oil
- 3/4 tsp sugar
- 1 large garlic clove minced or grated
- 1/2 lime juice of 1/2 a lime
Instructions
- Slice the cucumber thinly into a large lidded jar or tub – I recommend using a mandolin for speed (but use it carefully!)
- Add the rest of the ingredients. Put the lid on and shake the jar or tub well until the cucumber slices are coated in the sauce. Enjoy straight away!
