I’ve been eating this Watermelon Salad since Summer 2022, when an article revealed that a variation of this salad was a favourite of Kate Middleton’s. Apparently, she loved this salad during a heat wave as it’s both refreshing and nutritious. I made a vegan version with cucumber, red onion, mint, vegan feta with a tangy lime dressing, and I can confirm, it is absolutely delicious. It’s now a firm favourite of mine, perfect for warmer days and great for hosting.




Watermelon Salad
This Watermelon Salad is refreshing, nutritious and perfect for hosting on warmer days. It's vegan, gluten free and comes together in 10 minutes.
Ingredients
- 1/2 a small watermelon cubed
- 1/2 a cucumber cubed
- 2 handfuls fresh mint roughly chopped
- 150 g feta cheese (I use vegan) cubed
Lime Dressing
- 4 tbsp extra virgin olive oil
- 1 lime juiced
- 1 tbsp red wine vinegar
- 1-2 tsp sugar (or sweetener of choice) to taste
- 1/4 tsp salt to taste
Instructions
- Combine the salad ingredients together in a large bowl.
- Add the lime dressing ingredients to a jar or small jug and shake or whisk until well combined – taste and add any more seasonings to your preference.
- Pour the dressing over and gently toss to combine. Best served and eaten straight away.
