Watermelon Salad

This Watermelon Salad is refreshing, nutritious and perfect for hosting on warmer days. It's vegan, gluten free and comes together in 10 minutes.

Ingredients
  

  • 1/2 a small watermelon cubed
  • 1/2 a cucumber cubed
  • 2 handfuls fresh mint roughly chopped
  • 150 g feta cheese (I use vegan) cubed

Lime Dressing

  • 4 tbsp extra virgin olive oil
  • 1 lime juiced
  • 1 tbsp red wine vinegar
  • 1-2 tsp sugar (or sweetener of choice) to taste
  • 1/4 tsp salt to taste

Instructions
 

  • Combine the salad ingredients together in a large bowl.
  • Add the lime dressing ingredients to a jar or small jug and shake or whisk until well combined - taste and add any more seasonings to your preference.
  • Pour the dressing over and gently toss to combine. Best served and eaten straight away.
