Chocolate freezer bars {vegan, gluten free}

These Chocolate Freezer Bars are my favourite sweet treat at the moment! They’re so delicious, and made with totally plant based and gluten free ingredients. Not only are they super quick to make, they require no baking at all – my favourite kind of recipe!

I love having these freezer bars handy for when I’m on the go – they’re sweet, satisfying and the perfect snack to help get you through your day.

INGREDIENTS

  • 1 scant cup oat flour (grind quick oats to a fine flour using a high speed blender ā€“ use gluten free if required)
  • 1/2 cup ground almonds
  • 1/2 cup runny peanut butter (or nut butter of choice – use almond or cashew for a more neutral taste)
  • 1/4 cup maple syrup
  • 3 tbsp coconut oil, melted (I use ‘odourless’/’refined’ coconut oil to avoid the coconut taste)
  • 1/2 cup cocoa/cacao powder
  • Pinch sea salt
  • 1 tsp vanilla extract
  • Cacao nibs or dark chocolate chips (optional)

METHOD

  1. If you haven’t already, place your oats in a high speed blender (I use a NutriBullet) and pulse until a fine flour forms. Place this in a bowl and do the same with your almonds.
  2. Melt your coconut oil and place in a medium sized mixing bowl along with the peanut butter, maple syrup, vanilla and sea salt – mix well.
  3. Stir in the oat flour and ground almonds until well combined.
  4. Line a 8×8″ (or similar size) square tin with baking paper and press the mixture into the tin. Sprinkle with dark chocolate chips or cacao nibs (optional).
  5. Place in the fridge or freezer to set for half an hour. Take out and slice into squares – enjoy! Keep in a container in the fridge or freezer.

DOUBLE CHOCOLATE FREEZER COOKIES {vegan, gluten free}

Double Chocolate Freezer Cookies

I’m not lying to you when I tell you these Double Chocolate Freezer Cookies are INCREDIBLE! They’re so simple to make but so so tasty. I adore the chewy chocolatey-ness when eaten straight from the fridge/freezer. These freezer cookies are totally vegan and gluten free, and so quick to make!

These Chocolate Freezer Cookies are made with the simplest ingredients; nut butter, coconut oil, cocoa powder, oats.. the typical plant based staples! They’re a super satisfying snack and will keep you full until your next meal. I highly recommend adding in cacao nibs, the bitter crunch of them go amazingly with the chewiness of the cookie.

I seriously love freezer recipes, they’re so much more fun to make and far less complicated than recipes that require baking.. you can’t really go wrong with them! What’s not to love?! CHOCOLATE CHIP TAHINI FUDGE {vegan, gluten free, nut free}

Hi guys! I’ve been wanting to share this recipe with you for AGES (if you haven’t already noticed on Instagram..) and now I’m free of studying I finally can! These cute lil fudgey bites are SO chewy + sweet, which contrasts deliciously to the slight bitterness of the tahini (trust me, it works). It also happens to be totally vegan and gluten free, oh and there’s a nut free option too! Hooray!
