It’s Autumn. Which, in the UK, means lots of rainy days and flu season starting. Add in to the equation a toddler who willingly distributes every virus available to her, it means our family tends to get ill almost weekly. Enter… this Roasted Butternut, Carrot & Sweet Potato Soup. Full of the good stuff, incredibly easy, and so tasty! So, ill or not, give this a go – trust me!
Chickpea & Mushroom Curry
So my partner isn’t a big fan of mushrooms. In fact, he ‘hates’ them. And by ‘hate’, I mean he’s never actually tried one (despite being plant based and a bit of a foodie). Anyway, he loved this chickpea and mushroom curry I put together the other day and I think that alone proves how nice this is (but if you’re in doubt, give it ago. It’s incredibly easy and so so tasty!)
Chocolate Chip Pumpkin Mug Cake
It’s pumpkin season! It’s also awful weather here in the UK. So let’s combine my favourite things… Chocolate Chips (vegan in my case of course), pumpkin, and mug cakes. Introducing my Chocolate Chip Pumpkin Mug Cake!
BBQ Tofu Ribs
Introducing to you, my friends, my BBQ Tofu Ribs. These are incredibly tasty and if you get the tofu right, can act as a great meat replacement. I’ve been working on this recipe for a while, so I really hope you enjoy it! If you do, let me know!
Moroccan Chickpea Lentil Soup
I recently found an old family recipe folder we thought we’d lost. This is a recipe we cobbled together when I was younger. I was obsessed with it. This Chickpea Lentil Soup is so tasty and has a lovely kick to it. Give it a go and let me know what you think!
