I set myself a mission to create the ultimate No Bake Granola Bar that actually tastes delicious and is easy to make, and I think I’ve succeeded! These No Bake Granola Bars are made with lightly toasted oats, nuts and seeds, and bound together with a maple peanut butter mixture and they are absolutely delicious. They’re perfect for meal prep, grab and go snacks, or just when you fancy a little sweet treat.

These No Bake Granola Bars are made with lightly toasted oats, nuts and seeds, and bound together with a maple peanut butter mixture and they are absolutely delicious. They're perfect for meal prep, grab and go snacks, or just when you fancy a little sweet treat.

Ingredients
  

  • 70 grams oats I use a mixture of jumbo oats and porridge oats
  • 50 grams nuts of choice, roughly chopped I like to use a mixture of almonds, brazils, cashews and hazelnuts
  • 30 grams seeds of choice I used sunflower and pumpkin seeds
  • 1/2 tsp cinnamon
  • 1 cup smooth peanut butter (or nut/seed butter of choice) You can also use cashew butter, almond butter, or for nut-free: tahini or sunbutter
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil (I use refined coconut oil to avoid the coconut taste) or you can use vegan butter
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 70 g dried fruit of choice I used a mixture of chopped dates, raisins and chopped dried apricots

For topping:

  • 80 grams dark chocolate
  • 1 tsp coconut oil optional

Instructions
 

  • Preheat your oven to 190C and line a baking tray with baking paper.
  • Add the oats, nuts and seeds to the tray and spread out. Place in the oven for 7-10 minutes until they're lightly toasted and fragrant (keep an eye on them and do not let them burn!)
  • Add the nut butter, coconut oil, vanilla extract and maple syrup to a small saucepan and melt together over a low heat.
  • Add the oats, nuts and seeds to a medium bowl along with the cinnamon and a small pinch of salt.
  • Pour the nut butter mixture over and mix well.
  • Line a loaf tin with baking paper and press the mixture into the tin.
  • Melt the dark chocolate with the coconut oil in the microwave or in a double boiler (Bain Marie). Pour over and spread over the top of the bars. Place in the fridge for an hour to set. Slice into bars and enjoy!

    Wow, these are delicious!! I saved the recipe and was frantic because I couldn’t remember where I put it. I cut these into smaller squares and freeze them then leave out for a few minutes to soften slightly. They’re perfect!! Thank you 😊
