Whipped Feta with Roasted Strawberries

This Whipped Feta with Roasted Strawberries is the most perfect appetiser or sharing dish for your Summer hosting. Serve with olive oil, fresh basil and crusty bread.

Ingredients
  

Roasted Strawberries

  • 700 grams fresh strawberries chopped in half (or quarters if they're bigger)
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 pinch cracked black pepper

Whipped Feta

  • 1 block feta cheese I use vegan - the Violife Greek Style is my favourite!
  • 2 tbsp Greek Yoghurt I use vegan - I love the Alpro Greek Style
  • 1-2 tbsp olive oil
  • Pinch salt

To serve:

  • Baguette - slice into rounds, drizzle with olive oil and bake for 10 minutes until golden brown and crusty
  • Fresh basil chopped
  • Extra virgin olive oil

Instructions
 

  • Preheat the oven 120C and line a baking tray with baking paper.
  • Toss the strawberries in the balsamic vinegar, maple syrup and black pepper. Spread over the baking tray and place in the oven to roast for 25-30 minutes until they have softened and released their juices.
  • Make the whipped feta by adding the feta, greek yoghurt, olive oil and salt into a food processor or blender and whiz up until smooth.
  • Add the whipped feta to your serving dish, top with the jammy roasted strawberries, a drizzle of extra virgin olive oil and fresh basil. Scoop up with the crusty bread. Enjoy!
