Strawberry Overnight Oat Jars

It's strawberry season here in the UK, which is the perfect excuse to make these Strawberry Overnight Oat Jars. I've been in such a breakfast rut lately, but these jars have had me hopping out of bed for breakfast the past few days! Also, my toddler loves them too. Layered up with yoghurt and a delicious strawberry chia jam, these are going to be your new breakfast staple.

Ingredients
  

For the overnight oats:

  • 1 cup oats I like to use Linwoods Energy Strawberry Overnight Oats for extra strawberry flavour and goodness - linked above
  • 1 cup milk of choice such as oat or soya milk
  • 1 tsp vanilla extract optional
  • 1-2 tsp maple or agave syrup (optional - to sweeten)
  • 1 pinch salt

For the strawberry chia jam:

  • 2 cups fresh or frozen strawberries ends removed and chopped in half
  • 1-2 tsp maple or agave syrup (optional - to sweeten)
  • 2 tbsp whole chia seeds

For serving

  • 1 cup yoghurt of choice I used Alpro Soya Yoghurt
  • 5-6 fresh strawberries, diced for topping
  • Toasted coconut flakes for topping
  • Maple or agave syrup

Instructions
 

  • Make the overnight oats by adding all the ingredients to a medium bowl, stirring well and then covering and leaving to soak in the fridge for 2 hours or overnight.
  • Make the chia jam by adding the strawberries and sweetener (if using) to a saucepan over a medium heat. When they start to soften and the juices start to release, mash the strawberries down with the back of a fork. Simmer for 5-10 minutes. Remove from the heat and stir in the chia seeds - let the mixture gel up and thicken.
  • Layer up the jars with the overnight oats, chia jam and yoghurt, topping with the fresh strawberries. Enjoy!
