Smokey Tofu Pasta

Ingredients
  

  • 300 grams pasta of choice
  • 1 150 gram block tofu extra firm, drained and pressed
  • 1-2 tbsp olive oil
  • 3 cloves garlic minced
  • 3 tbsp tomato puree
  • 1 tbsp liquid smoke
  • 1 tbsp balsamic vinegar
  • 3 tsp smoked paprika
  • 2 tsp chilli powder
  • 2 tsp oregano
  • Salt to taste
  • 2 tsp sugar
  • 1.5 400g tins chopped tomatoes
  • 1 large handful fresh parsley chopped
  • 70 grams spinach
  • Vegan parmesan for topping

Instructions
 

  • Cook your pasta according to packet instructions.
  • Heat the oil in a pan over a medium-high heat, then add the garlic and cook for 1-2 minutes.
  • Crumble the tofu into the pan and saute, while stirring, for 3-4 minutes.
  • Add the spices and sugar and cook for 1-2 minutes more.
  • Add the tomato puree, tin of tomatoes, balsamic vinegar and liquid smoke. Simmer for 10 minutes before stirring in the parsley and spinach (it's ready when the spinach has wilted).
  • Drain your pasta and stir it into the pasta sauce. Serve and enjoy!
