No Bake Granola Bars

These No Bake Granola Bars are perfect if you have a sweet tooth, but want a slightly more nutritious option. You can have these ready in under half an hour and you'll have delicious snacks ready for the week!

Ingredients
  

  • 3/4 cup smooth nut butter I use peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1.25 cups rolled oats
  • 1/4 cup ground almonds
  • 3 tbsp pumpkin seeds or another add in of choice
  • 3 tbsp sunflower seeds or another add in of choice
  • Pinch salt

Chocolate Topping

  • 1/2 cup dark chocolate chips (or a bar broken up!)
  • 2 tbsp coconut oil optional

Instructions
 

  • Mix the nut butter with the maple syrup, vanilla extract and pinch salt.
  • Add the oats, ground almonds and seeds (or other add ins of choice!)
  • Press into a lined loaf tin.
  • Melt the chocolate with the coconut oil in a Bain Marie/double boiler or in the microwave in 30 second bursts - you can leave out the coconut oil if you don't have it, it just gives the chocolate topping a softer texture.
  • Pour this over and spread out. Place in the freezer to set. Once the chocolate has set, remove and slice into bars. Store in an airtight container in the fridge for up to 1 week.
