No Bake Cinnamon Rolls

Cinnamon rolls without turning the oven on? Count me in! These are one of my all time favourite no bake treats. They're so quick and easy to make but the result is so impressive. I'm not going to lie to you and tell you these taste exactly like cinnamon rolls, because they don't. What they are is a delicious, fudgy treat that's perfect for satisfying those sweet cravings, while providing some extra nutritional benefits as well.

Ingredients
  

For the dough

  • 75 g ground almonds
  • 100 g oats
  • 2 tbsp agave or maple syrup
  • 2 tbsp nut butter almond, pecan or cashew butter works well
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 pinch salt

For the filling

  • 150 g medjool dates pitted weight, soaked in hot water for 10 minutes to soften
  • 1 tbsp nut butter almond, pecan or cashew butter works well
  • 3 tsp cinnamon
  • 1 pinch salt
  • 1/2 tsp vanilla extract
  • 2-3 tsp water for blending

Instructions
 

  • Lay a large piece of baking paper out over a baking tray.
  • Make the dough by adding all the ingredients to a medium bowl and mix until well combined, it should have a fudgy, dough like mixture and come together easily.
  • Place the dough onto the baking paper and roll so it's around 3/4" thickness and shaped like a rectangle.
  • Make the filling by adding all the ingredients to a blender and blend until smooth and sticky (it may not be completely smooth but that's fine)
  • Spread over the rolled out dough into a thin layer.
  • Using the edge of the baking paper, carefully roll into a log. Place the log into the freezer for 20 minutes to harden up.
  • Remove and slice into rounds to your desired thickness. Store in an airtight container in the fridge. Enjoy!
