Apple Pie Overnight Oats

These Apple Pie Overnight Oats are easily my favourite overnight oat flavour I've tried so far. They require a little bit more effort as the apples require cooking, but the result is so worth it. Top with lashings of almond butter and tuck in to the cosiest, most satisfying breakfast.

Ingredients
  

For the apples

  • 1 tbsp coconut oil or butter (I use vegan)
  • 2 apples peeling is optional, and diced
  • 1-2 tsp maple syrup
  • 1/2 tsp cinnamon
  • 1 pinch salt

For the overnight oats

  • 1 cup rolled oats
  • 1 tbsp chia seeds or ground flaxseed
  • 1/2 cup Greek yoghurt I use vegan
  • 1.5 cups soya milk or milk of choice
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/-1 tbsp maple syrup optional
  • 1 pinch salt

Toppings

  • Almond butter
  • Cashew Butter
  • Syrup
  • Cinnamon

Instructions
 

  • To make the apples, heat a saucepan over a low heat and add the coconut oil or butter. Add the diced apples along with the cinnamon, pinch salt and syrup. Cover with a lid and cook for 10 minutes, stirring occasionally. Remove the lid and cook for a further minute, while stirring.
  • Add the overnight oat ingredients to a large bowl and mix well. Cover and leave to soak overnight or for 2-3 hours in the fridge until a porridge like consistency has formed.
  • When the oats are ready, serve with the stewed apples and toppings of choice. Alternatively, you can layer the oats and apples up in jars ready for grab and go breakfasts!
