Biscoff Mug Cake

Trust me, just make it. It takes just a few minutes to make it, then a minute to type out an email thanking me. Do it.

Cook Time 2 minutes mins
- 4 tbsp Plain Flour
- 3 tbsp Biscoff Spread
- 1 tbsp Neutral Oil (you could use melted vegan butter or melted coconut oil)
- 1/4 cup Dairy-free Milk
- 1 tbsp Sugar
- 1/4 tsp Baking Powder
- 1/2 tsp Cinnamon
- Pinch Fine Salt
For Serving
- 1 Biscoff Biscuit crumbled
- Vegan Ice Cream (you could also use vegan cream or coconut yoghurt)
In a large, microwavable mug, stir together the Biscoff spread, oil and dairy free milk until smooth
Add the remaining ingredients and stir well
Smooth the top with the back of a teaspoon
Microwave for 1 minute
Check the mug cake, and continue microwaving for 15-20 second bursts until cooked
(Mine took 1 minute 40 seconds at 900w)
Leave to cool for a couple of minutes (it will be very hot!)
Top with your preferred toppings (I love crumbled biscoff biscuits with vegan double cream!)
