Biscoff Mug Cake

Ingredients
  

  • 4 tbsp Plain Flour
  • 3 tbsp Biscoff Spread
  • 1 tbsp Neutral Oil (you could use melted vegan butter or melted coconut oil)
  • 1/4 cup Dairy-free Milk
  • 1 tbsp Sugar
  • 1/4 tsp Baking Powder
  • 1/2 tsp Cinnamon
  • Pinch Fine Salt

For Serving

  • 1 Biscoff Biscuit crumbled
  • Vegan Ice Cream (you could also use vegan cream or coconut yoghurt)

Instructions
 

  • In a large, microwavable mug, stir together the Biscoff spread, oil and dairy free milk until smooth
  • Add the remaining ingredients and stir well
  • Smooth the top with the back of a teaspoon
  • Microwave for 1 minute
  • Check the mug cake, and continue microwaving for 15-20 second bursts until cooked
  • (Mine took 1 minute 40 seconds at 900w)
  • Leave to cool for a couple of minutes (it will be very hot!)
  • Top with your preferred toppings (I love crumbled biscoff biscuits with vegan double cream!)
