2flax eggs (2 tbsp ground flaxseed mixed with 5 tbsp water and left to 'gel up' for 10 minutes)
100mlmilk of choicesuch as soya, oat etc
60mlvegetable oil
70gsugar
3tbspnut butter
1tspvanilla extract
Dry:
200gplain flour
1tspbaking powder
1/2tspbicarbonate of soda
1tspcinnamon
50gcocoa powder
1pinchsalt
100gdark chocolate chipsplus a few more for topping
Instructions
Preheat the oven to 180C. Grease and line a loaf tin with baking paper
Add the wet ingredients to a large bowl and whisk until well combined.
Sieve in the flour, baking powder, bicarbonate of soda, cinnamon, cocoa powder and salt, mix until combined
Fold in the chocolate chips
Pour the batter into the lined tin. Sprinkle a few more chocolate chips on top and place in the oven to bake for 50-55 minutes or until a skewer comes out clean. Remove from the oven, let it cool in the tin for a few minutes before removing and slicing. Enjoy!
