If you're a fan of the classic chocolate and marshmallow combo, but looking for a vegan-friendly version, then you've come to the right place. With rich dark chocolate, crunchy nuts, and fluffy marshmallows, this Vegan Rocky Road is the perfect treat for any occasion.

Ingredients
  

  • 150 grams Vegan Dark Chocolate
  • 100 grams Vegan Milk Chocolate
  • 120 grams Vegan Butter
  • 2.5 tbsp Golden Syrup
  • 150 grams Vegan Digestive Biscuits
  • 60 grams Vegan Mini Marshmallows (or cut up larger ones)
  • 50 grams toasted nuts (almonds, pistachios and brazil nuts work nicely)

Instructions
 

  • Melt the chocolate in a Bain Marie until smooth
  • Once smooth, add the golden syrup and butter, then let it all melt together
  • Add the rest of the ingredients and stir so everything is coated
  • Pour into a lined 8x8 tin and place in the fridge to set for approximately 3 hours (or the freezer for 15-20 minutes)
  • Once solidified, slice into squares and enjoy!

Notes

These can be stored in the fridge in an airtight contained for up to 2 weeks
