Chocolate Chip Tahini Fudge (Vegan, Nut & Gluten Free)

Hi guys! I’ve been wanting to share this recipe with you for AGES (if you haven’t already noticed on Instagram..) and now I’m free of studying I finally can! These cute little tahini fudge bites are SO chewy & sweet; which contrasts deliciously to the slight bitterness of the tahini (trust me, it works). It also happens to be totally vegan and gluten free, oh and there’s a nut free option too! Hooray!

Everything You Need to Make My Tahini Fudge…

Tahini fudge is actually easy to make! Here’s the ingredients you’ll need!

  1. Hulled Tahini (1/2 Cup): Tahini is a paste made from ground sesame seeds. It has a rich, nutty flavor and a creamy texture. In your fudge recipe, tahini serves as the base and primary flavor component. Its smooth consistency and distinctive taste add a depth of flavor, creaminess, and a slightly nutty undertone to the fudge.
  2. Smooth Cashew Butter or Almond Butter (3 tbsp): Cashew or almond butter contributes to the fudge’s creaminess and provides a natural source of healthy fats. These nut butters also add a subtle nuttiness and richness to the overall taste, complementing the tahini and enhancing the fudge’s texture.
  3. Maple Syrup (1/2 Cup): Maple syrup is a natural sweetener with a distinct, rich flavor. It adds sweetness to the fudge while also contributing to its overall flavor profile. The use of maple syrup also brings some moisture to the recipe, helping to bind the ingredients together and keep the fudge soft.
  4. Oat Flour (3/4 Cup): Oat flour is made by grinding oats into a fine powder. It serves as a binder and thickening agent in the fudge, helping to give it structure. Oat flour also imparts a wholesome, slightly nutty taste and adds to the fudge’s texture. The use of oat flour, especially if made from gluten-free oats, makes the recipe suitable for those with gluten sensitivities.
  5. Vanilla Extract (2 tsp): Vanilla extract is a common flavor enhancer that adds a pleasant aromatic note to the fudge. Even though the amount used is relatively small, it helps balance and round out the flavors of the other ingredients, making the fudge taste more complex and appealing.
  6. Salt (1 Pinch): Salt is a crucial ingredient in most recipes, including sweet ones. It enhances the overall flavor profile by balancing sweetness and enhancing other flavors. Even a small pinch of salt can make a noticeable difference in taste, making the fudge more satisfying.
  7. Vegan Chocolate Chips (1/3 Cup): Chocolate chips add a delightful burst of chocolate flavor and texture to the fudge. They contribute to the fudge’s sweetness and richness while providing small pockets of melty goodness. The contrast between the creamy fudge and the slightly firmer chocolate chips creates an enjoyable textural experience.

Ingredients
  

  • 1/2 Cup Hulled Tahini
  • 3 tbsp Smooth Casher Butter or almond butter
  • 1/2 Cup Maple Syrup
  • 3/4 Cup Oat Flour simply grind quick oats in your blender until a fine flour forms (use gluten free oats if needed)
  • 2 tsp Vanilla Extract
  • 1 Pinch Salt
  • 1/3 Cup Vegan Chocolate Chips

Instructions
 

  • Line the bottom of a loaf tin with baking paper
  • In a medium sized mixing bowl add the tahini, nut butter, maple syrup, vanilla extract and pinch sea salt (whisk together until fully combined)
  • Add in the oat flour and mix well
  • Fold in the chocolate chips
  • Spoon the mixture into the bottom of the loaf tin and press down slightly with the back of your spoon so that it's evenly spread
  • Place in the freezer for about 40 minutes
  • Take out and flip the slab over onto a board – With a sharp knife, slice the block into little squares

Yet, as it’s calorie-dense, portion control is crucial to prevent excessive calorie intake.

Additionally, potential sesame seed allergies should be considered.

  1. Can you substitute almond flour, coconut flour, or flaxseed meal for oat flour as a grain free/low carb option?

    1. I’ve never tried with those, but I’m pretty sure almond flour would work well! Coconut flour would make it more dry xx

    1. I haven’t actually tried it with wholewheat flour! I’m not too sure if it would have the right consistency. Let me know if you try it. Xx
