Chocolate freezer bars {vegan, gluten free}

These Chocolate Freezer Bars are my favourite sweet treat at the moment! They’re so delicious, and made with totally plant based and gluten free ingredients. Not only are they super quick to make, they require no baking at all – my favourite kind of recipe!

I love having these freezer bars handy for when I’m on the go – they’re sweet, satisfying and the perfect snack to help get you through your day.

INGREDIENTS

  • 1 scant cup oat flour (grind quick oats to a fine flour using a high speed blender – use gluten free if required)
  • 1/2 cup ground almonds
  • 1/2 cup runny peanut butter (or nut butter of choice – use almond or cashew for a more neutral taste)
  • 1/4 cup maple syrup
  • 3 tbsp coconut oil, melted (I use ‘odourless’/’refined’ coconut oil to avoid the coconut taste)
  • 1/2 cup cocoa/cacao powder
  • Pinch sea salt
  • 1 tsp vanilla extract
  • Cacao nibs or dark chocolate chips (optional)

METHOD

  1. If you haven’t already, place your oats in a high speed blender (I use a NutriBullet) and pulse until a fine flour forms. Place this in a bowl and do the same with your almonds.
  2. Melt your coconut oil and place in a medium sized mixing bowl along with the peanut butter, maple syrup, vanilla and sea salt – mix well.
  3. Stir in the oat flour and ground almonds until well combined.
  4. Line a 8×8″ (or similar size) square tin with baking paper and press the mixture into the tin. Sprinkle with dark chocolate chips or cacao nibs (optional).
  5. Place in the fridge or freezer to set for half an hour. Take out and slice into squares – enjoy! Keep in a container in the fridge or freezer.

They take a total of about 10 minutes + require only 4 super simple ingredients! These tasty peanut butter balls are so easy to make and require absolutely no baking at all! You can store them in your fridge or freezer so you have a quick and tasty snack for whenever you get peckish. You’ll be thankful you made them when that 4pm afternoon slump hits.

Chocolate Peanut Butter Bars

There’s nothing better than peanut butter and chocolate, right? These no-bake Chocolate Peanut Butter Bars are SO delicious, as well as being ridiculously easy to make! They’re totally vegan, flourless and gluten free – making them the most perfect sweet treat to suit pretty much everyone. Not only are they really tasty, they’re also super satisfying.

I love using coconut flour – the texture is so perfect for these kind of no-bake treats! It makes the bottom layer just like the inside of Reese’s peanut butter cups.. YUM.

CHOCOLATE CHIP TAHINI FUDGE {vegan, gluten free, nut free}

Hi guys! I’ve been wanting to share this recipe with you for AGES (if you haven’t already noticed on Instagram..) and now I’m free of studying I finally can! These cute lil fudgey bites are SO chewy + sweet, which contrasts deliciously to the slight bitterness of the tahini (trust me, it works). CHICKPEA COOKIE DOUGH {vegan, gluten free, grain free}

Chickpeas have to be the MOST versatile ingredient there is.. they suit both sweet and savoury recipes perfectly. The texture is amazing for cookie dough – so I just had to share this recipe with you! It literally takes under 5 minutes to make and is totally vegan, gluten free and grain free.
