These vegan protein blondies are super easy to make, so tasty, and incredibly nutritious! If you’re a bodybuilder, athlete, or simply someone looking to increase their vegan protein intake, these are for you!

When the lovely people over at Free Soul contacted me regarding trying out their protein powder, I have to admit, I was skeptical at first. I’ve tried many vegan protein powders in the past from various brands and I tend to find they either have a funny taste or weird texture. However, after looking at their beautiful Instagram and website, I just had to say yes!

The delivery came in the post and at first I was taken aback by their gorgeous packaging (you guys know how much I like aesthetically pleasing packaging..) like seriously, I could stare at it for hours!

Firstly, I tried the protein in a super simple smoothie. I blended up a frozen banana, a handful of berries, a little frozen courgette and a scoop of the Free Soul vanilla protein, it was DELISH – super creamy and dessert-like. And who doesn’t like dessert for breakfast?! I also found that my blood sugar didn’t crash a couple hours after breakfast, which it usually does! I can’t wait to incorporate this protein into more of my breakfasts and snacks.

This blend of natural and nutrient-dense ingredients such as Maca, Guarana and Ginseng makes this protein one of a kind; these ingredients can help to balance hormones, energy and mood. These Vegan Protein Blondies are your new favourite sweet treat. The addition of the Free Soul Protein Powder adds the BEST vanilla taste! They’re quick to bake, contain the simplest ingredients, and they taste seriously good (obviously). I wanted to make sure they were the perfect combination of moist and fluffy – and I think I’ve cracked it. The gooey raspberries just make them even more scrumptious!

I’ve also included the option for 2 different add-ins: chopped dark chocolate or raspberries. Both work deliciously in this recipe (trust me, I’ve tried them). If you’re feeling extra funky, you can even add both.

Vegan Protein Blondies (Dairy & Soy Free)

Servings 9 Blondies

Ingredients
  

  • 1.5 Cups All Purpose Flour
  • 4 Scoops Vanilla Protein
  • 1 Pinch Sea Salt
  • 1 tsp Baking Powder
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Almond Butter or Cashew
  • 1/3 Cup Coconut Oil melted
  • 1 Cup Non-Dairy Milk
  • 2 tsp Vanilla Extract
  • 3/4 Cup Raspberries or 3/4 cup chopped dark chocolate

Instructions
 

  • Preheat your oven to 185c
  • line a 9×9" (or similar size) square tin. Grease on top of the parchment paper
  • In a large mixing bowl, stir together the flour, protein powder, sea salt, baking powder and sugar of choice
  • In another smaller bowl, add the nut butter (if it's thick/difficult to stir, pop it into the microwave for 20 seconds to soften), the oil and the non-dairy milk, then whisk
  • Pour the wet mixture into the dry bowl and mix until a thick batter appears. If it seems a little thick, add a splash more milk
  • Stir in the raspberries/chocolate chunks until evenly distributed
  • Pour the batter into the lined tin and spread out using a spatula
  • Place in the oven to bake for 20-25 minutes until golden brown around the edges or until a skewer comes out clean
  • Take out and let them cool for 40-45 minutes
  • Chop into 9 squares and enjoy!

Vegan Protein Blondies – The Ingredients

Here’s all the ingredients you’ll need to make my vegan protein blondies…

  1. All-Purpose Flour (1.5 Cups): This is the main dry ingredient in the recipe and provides structure to the blondies. However, keep in mind that using solely all-purpose flour might result in a slightly less nutritious final product compared to using whole wheat flour or a combination of flours.
  2. Vanilla Protein (4 Scoops): Adding protein powder enhances the nutritional content of the blondies and makes them more satisfying. It’s a great addition, especially for those looking to increase their protein intake. Make sure the protein powder you’re using is vegan and of good quality.
  3. Sea Salt (1 Pinch): Sea salt is used to enhance the overall flavor of the blondies and balance the sweetness. Just a pinch is enough to provide a subtle salty note.
  4. Baking Powder (1 tsp): Baking powder is a leavening agent that helps the blondies rise and become light and fluffy.
  5. Granulated Sugar (1/2 Cup): This provides sweetness to the blondies. If you’re aiming for a less sweet option, you could consider reducing the amount of sugar or using alternatives like coconut sugar, maple syrup, or agave nectar.
  6. Almond Butter or Cashew (1/2 Cup): Nut butters like almond butter or cashew butter contribute to the richness, flavor, and moisture of the blondies. They also add healthy fats and a touch of protein.
  7. Coconut Oil (1/3 Cup, melted): Coconut oil adds moisture and a pleasant coconut flavor. It also contributes to the texture of the blondies. Be aware that coconut oil is high in saturated fat, so use it in moderation if you’re concerned about saturated fat intake.
  8. Non-Dairy Milk (1 Cup): This provides moisture to the batter and helps bind the ingredients together. It’s essential to use a non-dairy milk to keep the recipe vegan.
  9. Vanilla Extract (2 tsp): Vanilla extract enhances the flavor profile of the blondies, giving them a warm and inviting aroma.
  10. Raspberries or Chopped Dark Chocolate (3/4 Cup): This ingredient adds texture, flavor, and visual appeal to the blondies. Raspberries can provide a fruity, slightly tart contrast to the sweetness, while dark chocolate can bring a rich and indulgent element.
